Lash Housewife: Unsloppy joes.
So. You all know I *try* to be healthy. We eat pretty well most of the time. BUT...BUT I saw a commercial the other night for "Unsloppy joes" and thought "why have I not had THAT??"
I made it so. And I was not disappointed. There are some ways to make this healthier....but I didn't do any of those. Let's be clear. Lazy. That's the road I chose.

Biscuits.
Manwich.
Shredded cheese.
Yeah, that's it. It's pretty much as simple as it sounds. Make the sloppy joes. Scoop the slopy Joe mix onto a biscuit (spread it thin,) top with cheese, fold it over (I crimped it with a fork to help it stay together)
And bake.
They were gobbled up by my family. Now-you can totally make the SkinnyTaste sloppy joes (the link to that recipe is HERE, and homemade biscuits and you've increased your "health-o-meter." Or you can be like me and just buy it all in a can.
Also of note: Three and Four managed to make them SLOPPY. They took bites from both ends, allowing for it to ooze out of the ends when they took another bite. But for the rest of us, these were very UNsloppy.

Wordy Wednesday
I haven't been able to find a topic that I feel really strongly about to post about this week. Weird, right??
I'm going to just post something brief about how you should be living every day to its very fullest. Don't let life pass you by, and whatnot. ;)
Think about it that way. It's the honest truth. Those seconds, moments...that you didn't take advantage of today? You don't get back. And, while I haven't BEEN on my death bed, I imagine you will recollect on lots of lost moments in those last few.
Whatever it is you're thinking about, wishing for, hoping will happen...go out and make it SO. Take that first step towards whatever it is you want. Set a new goal and make yourself work towards it every single Damned day. You won't regret it. <3
So it was wordier than I anticipated. Sue me.

Manic Monday
Manic Monday's are back. Oh Joy!
I teach two classes from 9:30-12. It takes us 35 minutes to drive home. Putting us home around 12:45 (because I rarely get out of the building before 12:10.) Leaving us 30 minutes to eat lunch and change for Taekwondo. Did I smoke some crack before I ok'd this move?? Maybe I did.
It's ok. I just need to get more prepared. Today I was scrambling to try to figure out what to feed Three and Four and myself before we headed out the door again. This choice also means that I don't get my very well deserved shower after class. That's what I'm missing the most so far.
Tomorrow is our first Lego Club meeting and I'm super excited. I mean, the boys, the boys are super excited. It's immediately following my class, so again, I need to prepare! Pack snacks and lunch, etc.
Wednesday we get back to co-op (we've only been once since our holiday break) and I'm ready to see my friends...oh and let the boys learn stuff, whatever.
Thursday: a whole lot of nothing.
Friday I teach again, and I'm HOPING we can make it to park day with our homeschool group. But we may sit it out because I'm a wuss about the cold.

Lazy Housewife: Crock pot
Almost a year ago, I broke our crock pot. I cracked the porcelain crock that was in it. Our schedule is getting crazier (I just joined 2 other homeschool groups and am really trying to be active. PLUS I now teach 4 classes a week, and have to keep the house clean and COOK?? Ain't nobody got time for that.)
We renewed our membership to BJ's (think Sam's Club and Costco) and as we were walking along to aisles to purchase ALL THE THINGS...I saw this:
6 quart iStir (And just FYI....that's not an affiliate link, I just really like the product that I'm pimping out.)
Yes, ladies and gents of the interwebs, it STIRS itself. I want it. You know you can throw all the things in the pot for a stew or a chili, but if you don't stir it that outside edge gets crusty and goopy and you have bits stuck to the bottom....now it sort of defeats the purpose of the damned thing doing ALL the cooking for me if I have to remember to stir it every so often (c'mon this is the LAZY housewife post....) soooo voila! I can be gone all day and my chili will still be stirred? Yes please.
I'm not even kidding.
I need this in my life. Universe? Make it so!

Wordy Wednesday: Lights, Camera, ACTION!
I'm going to be on TV today. *insert nervous screech*
It's a small public access show named: Proverbs 31 (A Spiritual View of Johnston County) AHAHAHAHAHAHAHA if you KNOW me, you know why this is funny. But, I digress. It is a TV interview none-the-less! I'm excited to talk about my passion for zumba and fitness overall. I'm NERVOUS to do it in front of cameras.
I get to talk about Zumba, I get to talk about my senior-citizen class, I get to talk about my place of employment (which I really and truly LOVE.) This makes my 3rd TV appearance in my lifetime, you'd think I'd be an old pro at it by now, huh? The other 2 were when I was a kid. I was 10 and 13 when I did news spots to highlight Big Brothers/Big Sisters of Central Florida. I had the most amazing experience with that program, and was the "poster child" for a few years. Those were big time interviews too, much bigger than what I'm expecting for today, but I was young enough or stupid enough to not feel nervous about them.
I haven't decided what I'm wearing. I meant to get my hair colored. I haven't worked out today. I haven't done any school with the kids. But, here I sit. Venting out my nerves on the interwebs instead of tackling even one of those more important things.

Flashback Friday
This week:
Tae Kwon Do, co-op, grandma came, a birthday! Oh my!
This week has been pretty normal.
I taught my classes-new sessions across the board, so a LOT of new choreo. Phew!
Monday Three blew me away reading. We did a LITTLE over the break, but not enough IMO, he's been really struggling and I was concerned. He showed me.
Tuesday, again, I taught. The only other activities we got done were reading and installing a pull-up bar.
Wednesday we had co-op. The boys are learning about numbers and native Americans.
THURSDAY we spent all day preparing for grandma's arrival. I made a big pot of chili, mmm mmm. It hit the spot since we are having a really cold snap!
Friday I taught and we finally did a full day of school! Hallelujah!
